Silver Needle 白毫银针

Silver Needle was invented in 1796. It is mainly produced in Fuding, Zherong, Zhenghe, Songxi and Jianyang, Fujian Province. Silver Needle is one of the Ten Famous Teas of China. It is also called the Beauty of Teas or the King of Teas. Raw tea leaves look like straight needles, about 3cm long. They are covered with fine white fuzz (bai hao), which look like a pile of snow.

 

The Name

The name “Silver Needle” is derived from the fact that it is made from tea buds only. When the buds are processed, they look like needles. Fine white fuzz covers them, looking silver and snow-like.

 

Picking Standard

Silver Needle is hand-picked in spring when a new shoot has one bud and one leaf. The main leaf and the tiny baby leaf (fish leaf) are separated from the bud by hand. The separated buds are spread evenly on bamboo trays (shui shai), so that no bud is overlapping.

Then they are lightly sun-dried or air-dried under a shaded and breezy place until 80-90% dry. Finally, they are slowly dried in baskets over extremely low temperature (30-40°C) until fully dry. Sometimes, they are dried under strong sunshine until fully dry instead. This kind of Silver Needle is called Mao Zhen (rough-dried needles).

After Mao Zhen is dried, the plumpest, longest buds are selected by sieving. The stems (called Silver Needle feet) are picked by hand. Leaves, broken pieces or poor-quality buds are sifted out as well. The best buds are dried again over low temperature and packed when still warm.

There are two types of Silver Needle according to the place of origin and the tea plant variety.

 

Northern Route Silver Needle 北路银针

Fuding Da Bai Cha Cultivar

Silver Needle from Fuding has a beautiful appearance. The buds are sturdy and plump with thick, dense white fuzz and shiny look. The brewed tea is very clear with a light apricot-yellow color. The tea has a light, fresh aroma and a mellow, smooth taste.

 

Southern Route Silver Needle 南路银针

Produced in Zhenghe, Songxi, Jianyang

Zhenghe Da Bai Cha Cultivar

Silver Needle from Zhenghe has a sturdy and long appearance. The white fuzz is thinner and less shiny than the northern one. This version emits a more powerful aroma while delivering richer and heartier flavors.

Silver Needle tea gets its name because the finished tea looks like needles and is silvery white. It's often called the "King of Tea". Picking Silver
Needle is very careful work. Only plump single buds are chosen. If a bud with one or two young leaves is picked, only the bud heart is used. The tea soup is clear and bright, like amber, shining through. The flavor is fresh, clean, and sweet. You'll notice light grassy and floral notes, along with creamy and nutty hints (like peanuts). What’s more, the tea buds are rich in nutrients like healthy compounds. This gives the tea a rich, full feel and a long-lasting, pleasant aftertaste.

White tea is an exception. Its internal compounds evolve over time, enhancing its fragrance and creating a deeper, mellower taste. Therefore, it does not have a specific optimal drinking period.
