The Secret of “Dong Ding”

Dong Ding Mountain located within Lugu Township in Nantou County Taiwan supplies the primary source for Dong Ding Oolong tea. Dong Ding Mountain rises to 700 meters within the Fenghuang Mountain range.

Tea farmers in Dong Ding Mountain need to walk carefully on icy paths that led to rainy trails because “dong" means “freeze" in Chinese. The name “Frozen Summit Mountain” originates from Dong Ding Mountain's high elevation. The mountain is underlaid by exceptional soil which fosters dense forest growth. The Qingxin Oolong tea trees grow well in this particular area. Dong Ding Mountain possesses perfect conditions needed to cultivate premium Dong Ding Oolong tea.

Making Dong Ding Oolong tea needs thorough monitoring throughout each stage of production. The procedure starts with picking leaves from high-grade tea cultivars like Qingxin Oolong. After sun-withering and indoor-withering leaves move through shaking and pan-firing before entering the rolling and initial drying stages. The creation of traditional tea balls involves tea makers who must repeatedly roll and shape the leaves into tight forms multiple times. The tea preparation process concludes with one more drying stage and subsequent roasting. A special production procedure creates Dong Ding Oolong's unique appearance and flavor profile.

Once processed, the tea leaves develop into dark green strands featuring tight coils and emitting a soft glow. The resulting brew takes on a color that resembles honey. The tea presents a fresh floral smell while the flavor profile combines sweetness with creamy and toasted notes. The brewed tea displays leaves with a striking yellow-green hue.
